There is no better embodiment of Spanish gastronomic traditions than acorn-fed Iberian jamón: a delicacy with a smooth, creamy texture that melts in the mouth, an intense depth of flavour with a thousand nuances, and an aroma that evokes the poetry of the meadowlands and the bodega.

MORE THAN 20 MONTHS OF PATIENT CURING

To reach the exact point, the value of patience, the reward: the acorn-fed Iberian jamones of La Joya de de la Sierra Selection 1889 are hung in our bodegas for however long is necessary for each individual piece – a minimum of 20 months – to offer a unique experience.



AT SOURCE: EL REPILADO, HUELVA

Tradition in the form of Iberian jamón. The sierra of Aracena, with Huelva as its capital, is the peerless centre of jamón production. Its dry, cool climate and millenary curing methods further endorse this fact. This is how we produce this jewel in the crown in our drying shed of El Repilado, the oldest in the region.

La Joya de de la Sierra Selection 1889 is a limited-edition production, created by artisans and individually hand-selected by our master jamón curers at El Repilado, with all the experience and tradition of our 128-year history behind it. The ultimate embodiment of flavour.



THE IBERIAN PIG:
A NATURAL TREASURE

The Iberian acorn-fed pig is a true treasure, the result of months of careful tending in the meadowlands and feeding on acorns and wild herbs. This animal is unique for its healthy fats, rich in omega-3 and trace elements, which are ingrained in the darker meat and bring added flavour and aroma.
